- What is the difference between freeze-drying and dehydrating food? These two preservation techniques extract the water from the foodstuff through a cold or hot drying process. Freeze-drying removes the water contained in the food by transforming it from a solid state (frozen food) to a gaseous state. This method enables you to maintain the meal’s nutritional value as well as the taste, smell and colour of the food. Dehydration dries the food at high temperature. The water contained in the food evaporates.
