- 1 Can of chickpeas
- 1 Onion
- 1 Tomato
- 1 tbsp of tomato paste
- Sriracha
- Grated cheddar cheese
- 2 Tortillas
- Half a lime
Who said camping meals have to be boring? This spicy quesadilla is the perfect comfort food to end a long hike. This recipe takes no more than 20 minutes and can easily be spiced up with different ingredients.

Start by chopping up the onion and the tomato. Mash the chickpeas with a fork and set all of the ingredients aside.
Fry the chopped onion in a pan with a bit of olive oil until golden brown. Add-in the tablespoon of tomato paste.
After mixing the tomato paste with the onions, add the chopped tomatoes and the sriracha to taste, depending on how you like your spice. Incorporate the mashed chickpeas and cook for another 2 minutes.
Set the filling aside and use the pan to fry one of the tortillas until it is slightly toasted. Add the filling, a little bit (or a lot) of cheese and place the second tortilla on top.
Fry the quesadilla on both sides until the cheese is perfectly melted, transfer it on a plate and cut it in four. Add a squeeze of lime juice before serving and voila !
