Smokey Bean Brekkie

Ingredients & Equipment

Cooking time: 20 min

Ingredients for 2 servings:
. 1 can of mixed beans
. 1 small onion
. 1 garlic clove
. 1 red bell pepper
. 2 eggs
. 1 tsp of smoked paprika

Equipment:

Melt the ingredients for the cheese sauce

Step 1

Prep the ingredients by chopping up the onion, red bell pepper and mincing the garlic.

Fry the onion and pepper

Step 2

Fry the onion and garlic in a pan until softened and add the pepper. Saute the vegetables for 2-3 min.

Step 3

Add the drained and rinsed mixed beans to the pan, along with the smoked paprika. Stir the mixture to combine and cook for 2-3 minutes, until the beans are heated through.

Add the egg

Step 4

Use a spoon to make two small wells in the bean mixture and crack an egg into each well.

Step 6

Cover the skillet with a lid and cook for 5-6 minutes or until the eggs are cooked to your liking. Season with salt and pepper to taste and enjoy straight from the pan with a piece of toast.
