5Cr15 stainless steel

Our engineers selected the 5Cr15 stainless steel on this knife for 3 reasons:
- the steel is sufficiently strong to hold the wire long enough, as in cutting branches or treating venison for 2 hours.
- the steel is soft enough to allow easy sharpening thanks to a hardness of around 56 HRC, and to recover the wire in a few passes on a sharpening base
- the steel has a good resistance to corrosion due to its chemical composition.
